With a resurgence in the popularity of gin, here is a cool way to incorporate it into your cocktail menu. Okay so it isn’t new, but it will probably be new to most of your patrons as it was once popular in the Prohibition era but hasn’t been since then, I wonder why given that its so delicious.
Stir the honey into the water until dissolved to make a syrup. Pour into a cocktail shaker with the gin, lemon juice and a couple of ice cubes. Shake and strain into a cocktail glass.

Why not prepare your jelly shots in hollowed out fruit skins for a beautiful and professional look. Simply scoop out the flesh from the fruit and pour in the vodka/jelly mixture before freezing in a baking tray so that the fruit stays upright. The result is quite impressive.
