  • Australia’s Biggest Pub Launched Near Optus Stadium

    One week out from the AFL season opener and a year on from opening, we talk to Tim McLernon of the Three Pound Group, which launched Australia’s biggest pub, The Camfield, slap-bang next to Perth’s Optus Stadium. 

    Tim McLernon, General Manager of the Three Pound Group says: “From a group point of view, which is The Stables, The Reveley at Elizabeth Quay, The Camfield and Kartel, a month-long pop-up bar, what’s gone well for us was opening The Camfield in February 2018, right next to the new Optus Stadium.

    That’s been a massive positive. Opening a new venue of that sort of size can be a real challenge, from a staffing point of view to just dealing with that amount of people.”

    “Everything has gone pretty much how we thought it would. Obviously in the weeks building up to it you wonder ‘what the hell have I done here?’ but that’s been a massive positive. We’ve successfully opened a very large venue with a big capacity that has 45 days a year where we’re at capacity from 12pm to 12am.

    “We’ve got everything right – the staffing levels and being able to deal with game days. Even our back of house, which is probably the most important part in these big venues, you’ve got to have the right capacity to hold the stock and have managers able to marshal the troops.

    “The Camfield was a four-year project. We identified and trained up a number of individuals from our other venues we’d earmarked to come to The Camfield as managers or to replace managers leaving our other venues. We really needed to bring our A-team here. We had to draw all of our best guys who I know aren’t going to throw the towel in at 6pm on a Sunday when there are 3,000 people here ‘because it’s a bit too much’.”

  • SA’s Best Pub Burger Revealed

    The Feathers Hotel in Adelaide’s eastern suburbs has topped the SA Pub Burger Challenge, taking top prize for South Australia’s Best Pub Burger from the AHA SA for the hotel’s wagyu beef burger (pictured).

    The $24 creation by Chef Luke Brabin impressed the judges and features Wagyu Beef, smoked bacon, cheddar, tomato, lettuce, mustard, mayo, chimmi and crispy bits.

    It was the excellent flavour in addition to the presentation which made this burger a standout, and that is what you would go back to an establishment for. If the food tastes good, and it looks good, you’ll go back,” said judge Christine Stephan, after judging took place at Tasting Australia.

    “Overall the quality today has been amazing. Any of these burgers are worthy of being on their pub menu,” said Stephan.

    Feathers Hotel Venue Manager Andrew McDowell said he was thrilled with the result and commended Luke on his efforts.

    “We are very proud and excited to say that South Australia’s best pub burger can now be found in Adelaide’s eastern suburbs – right here at The Feathers Hotel,” Mr McDowell said.

    The other finalists for SA’s Best Burger were: Bellum Hotel, Mt Schank; Caledonian Hotel, North Adelaide; Cremorne Hotel; Golden Grain Hotel, Pinnaroo; Grove Hotel, Golden Grove; Hackney
    Hotel; Kensington Hotel; Lakes Hotel; The Pickled Duck, Modbury; Torrens Arms Hotel; and V Hotel, Virgina.

    “The Burger is often the signature of the Hotel, with venues putting their own spin and style as a point of difference” said AHA|SA CEO Ian Horne.

    “Hotel kitchens are keeping up with market trends to be more innovative and the quality of produce is immensely important. A burger is a highly sought-after menu item for patrons and along with other traditional pub fare, offers great value and is still incredibly popular,” said Horne.

    With over 50 entries received from hotels across the state, a blind tasting was held in March to determine the 12 finalists.

    The judging panel included SA Minister for Trade, Tourism and Investment, The Hon David Ridgeway MLC, Shane Wood of Holco Fine Meat Suppliers, Chris Stephan of Pen & Palate, Emma Shearer a TA Ambassador & The Lost Loaf and Adelaide chef Nicholas Finn. Master of Ceremonies for the challenge was celebrity chef Adam Swanson.

    The Feathers Hotel Precinct recently launched its new Greenhouse Restaurant, which also debuts a new menu and fine wine cellar, as well as its broader hotel refurbishment.

    Luke Brabin joined the Feathers Hotel Precinct as Executive Chef in late 2018. He trained under the mentorship and guidance of chefs including Cheong Liew, Simon Bryant, Luke Mangan, Tim Pak Poy, Josh Emmett and Gordon Ramsay.

  • Pub Under Investigation for Allegedly Supplying Alcohol to Minors

    A Clifton bar is facing possible fines of as much as $10,000 under the Liquor Licensing Act after it was alleged that the company supplied alcohol to an underage boy.

    Police say they received tip-offs that the venue may be supplying alcohol to children. Police as a result increased walk-throughs and inspections of licenced premises in the town and on a Saturday night discovered that a 16 year old teenager was drinking freely. The boy was found intoxicated at the bar of the licensed venue.

    The boy was taken into police custody and dropped off at his parent’s home where he was delivered into their care.

    The venue is facing severe penalties including hefty fines.

    Staff of licensed venues must always ask for photo identification, especially before serving younger patrons who look under 25, to ensure they are over 18 – the legal drinking age in Australia. Read more about Responsible Service of Alcohol training.

    A new series of round table discussions were launched earlier this month by Women in Hospitality, covering a range of issues from immigration laws to what being a female bartender means.

    The series began on 5 November at Bloodwood in Newtown with a discussion led by chef and owner Clare Van Vuuren.

    It also included advice from bartenders Jemima MacDonald and Elle Charalamb from Earl’s Juke Joint around a banquet style meal.

    Organisers say it is hoped the event will start the discussion for business owners, office managers and recruiters.

  • World’s Best Bar Revealed

    The Spirit Awards have revealed the World’s Best Bar at a ceremony that took place in New Orleans.

    This year the American Bar at The Savoy London won the Riedel Crystal Trophy and the honour of being labelled as the best bar in the world.

    Categories included International Bartender of the Year which was won by Joe Schofield of the Tippling Club in Singapore.

    The best international cocktail bar category was won by Happiness Forgets in London.
